Our decision to choose this spot wasn’t solely based on location or accessibility, but rather a combination of various factors. Firstly, the site’s history as an established restaurant since 1957 played a significant role. Additionally, the natural beauty of the location, situated on Sydney Harbour, was undeniably captivating. The existing building’s footprint was another factor that caught our attention, as it allowed us to create a spacious restaurant capable of accommodating 150 people. What truly sealed the deal was the orientation of the building, which provided an expansive and picturesque view of Rose Bay from every table, creating a cinematic dining experience. Moreover, the presence of parking facilities and the restaurant’s location in an affluent and densely populated area of Sydney further added to its appeal. In essence, this spot checked all the boxes and perfectly aligned with our vision of creating a remarkable dining destination.
If you can get a decent sized site with great views, nearby parking & a good local customer base, it’s a great start for any business.
STARTUP ADVICE
DEMI: WHAT ADVICE WOULD YOU OFFER TO ASPIRING FOUNDERS WHO ARE STARTING THRIE OWN VENTURES IN THE RESTAURANT INDUSTRY?
Michael: During the 1980s, we had the opportunity to own and operate smaller restaurants such as Barrenjoey House in Palm Beach and Perry’s in Woollahra, alongside Neil Perry. Although these ventures were not as ambitious or successful as Catalina, they offered invaluable experience and taught us important lessons about the industry, particularly the pitfalls to avoid. The idea for Catalina originated in my mind and persisted relentlessly. I decided to pursue it wholeheartedly, finding partners who shared my belief in the project and, most importantly, provided the necessary funding to bring it to life. This journey taught us that perseverance is key, and even if initial attempts don’t go as planned, it’s important not to give up and keep trying. Success may come from unexpected places, and the lessons learned along the way can be instrumental in achieving your goals.
Judy: When embarking on a new restaurant venture, it is crucial not to underestimate the importance of adequate capitalisation. Insufficient funds can hinder the success and growth of your business. Additionally, it is essential to maintain a balance between passion and rational decision-making. While your heart may guide your aspirations, it is crucial to ensure that every decision is grounded in sound financial principles. If a deal doesn’t align with your financial goals, it may be wise to walk away. Before committing to any agreements, it is advisable to have a qualified lawyer carefully review the contracts to protect your interests. Similarly, consulting with your accountant can provide valuable insights into the financial viability and potential risks of the venture. Our daily challenge revolves around “people” – both those who work for us and those we interact with on a regular basis. It is an ongoing challenge to source, hire, train, support, and retain the right staff members who not only align with our values but also uphold the high standards of service we expect.
This challenge applies to both our kitchen staff and service staff. We understand that we cannot take for granted that our employees will automatically behave in the desired manner. Therefore, our focus is on fostering a culture that encourages staff to take ownership and pride in the restaurant.
One of our significant challenges was facing little to no growth in Catalina for many years, which was further exacerbated by the global financial crisis in 2008. Our goal was to find a way to improve our market share, increase Catalina’s popularity, and maintain relevance despite having been a prominent establishment for 15 years.
It’s incredibly challenging staying relevant & to keep fulfilling the expectations of your customers, particularly having been in business for as long as we have. – Michael
We successfully overcame that challenge by modernising our approach and shifting our focus to digital marketing strategies. One of our key initiatives was the establishment of a customer database, allowing us to communicate regularly with our clients. We implemented various customer engagement programs, such as offering generous gifts on birthdays and providing priority bookings for special promotions and events, for our loyal patrons.
As a result, our customer database has grown to over 55,000 people, many of whom consider themselves regulars at Catalina. This, in turn, has fuelled our double-digit growth over the past five years, and we anticipate this positive trend to continue.
In addition to our digital marketing efforts, we recently partnered with Sweaty Betty PR to create a buzz around Catalina’s 20th birthday celebration. Their expertise has helped us enhance our presence on platforms like Instagram, where we have seen significant growth in our follower count (now over 25,000 compared to 4,000 three years ago). We have also leveraged digital influencers and lifestyle bloggers to increase our visibility and reach a broader audience.

Based on our experience with Catalina, I would personally recommend considering a business partnership. Having a business partner who invested in our restaurant from the beginning allowed us the freedom to run Catalina according to our vision. Additionally, my husband and I have been business partners in Catalina for 23 years, and our partnership has been instrumental in our success.
In our case, our partnership thrives on complementing one another’s strengths, bringing different ideas and skill sets to our business. We divide responsibilities based on our individual strengths, and while we may have differing opinions on certain matters, we both benefit from the restaurant’s success. Instead of being chefs, we focus on understanding and cherishing our customers, ensuring their expectations are met.
Just remember: a business partnership is like a marriage. Sometimes it works, & sometimes it ends in divorce!

Many of our customers became close friends, creating a sense of community within the restaurant. Our children spent countless days, nights, and weekends at Catalina, playing with other children while we all shared meals and drinks together. It was a unique lifestyle that our children embraced, and now they are actively involved in Catalina as well.

Catalina truly became a second home for our entire family, and even for our children’s friends. It has been a place where our personal and professional lives seamlessly intertwined.
What further added to this unique dynamic was the fact that we lived just across the road from Catalina in Rose Bay for 16 years. This close proximity between work and home allowed us to easily transition between the two, and I believe it contributed to the strong bond that James and Kate have with Catalina. It has always been a significant part of their lives, and they continue to love working here because of that deep connection.
FAMILY BUSINESS
DEMI: CAN YOU SHARE THE JOURNEY OF HOW YOUR CHILDREN BECAME INVOLVED IN THE HOSPITALITY INDUSTRY?
Our children’s involvement in the hospitality industry was a natural progression that we didn’t anticipate but embraced. Michael’s son, Paul, joined the team at Catalina and spent many years working with us. He started as a cook and demonstrated remarkable dedication and talent, eventually rising through the ranks to become the Head Chef. In 2011, Paul made the decision to embark on his own culinary journey and opened his own restaurant. It was a proud moment for us to see him pursue his passion and build his own successful venture.
Although my initial aim for James and Kate was for them to pursue higher education at university, they had different aspirations. Both of them were drawn to the restaurant and hospitality industry from a young age, and immediately after finishing school, they embarked on their own journeys, working in restaurants and nightclubs. While it wasn’t part of our original plan, it has been a natural progression over the past decade or so for James and Kate to become involved in the family business. Seeing their passion and dedication in contributing to Catalina brings me immense joy and fulfillment. I couldn’t be happier with the way things have unfolded.

DEMI: WHAT EXCITING UPCOMING EVENTS OR LAUNCHES ARE PLANNED FOR CATALINA ROSE BAY?
We have an exciting plan for a major rebuild scheduled for next winter at Catalina Rose Bay restaurant. The project includes several exciting enhancements that will elevate the dining experience. We will be building a more spacious bar, beautifully positioned over the water, offering stunning views. Additionally, we will be adding an expansive private dining room, allowing us to cater to larger groups and special events. A bigger kitchen will enable us to further enhance our culinary offerings and create memorable dishes. To support our growing operations, we are also incorporating additional office space, staff amenities, and increased storage capacity. It’s an ambitious project that aims to elevate every aspect of Catalina, and we can’t wait to share these exciting changes with our valued guests.

I Never go to work without … A big bottle of filtered alkaline water (I’m a bit of a health nut).

On perfection… Strive for it every day in your work, yourself, and your relationships, but don’t sweat it if you fall short. There’s always tomorrow.
On the look… Well-groomed does the trick.
On every day … Never leave the house without your makeup on, sounds shallow but it works for me.
On styling… It’s all down to personal taste, mine is all about classic, pared back design, whether we’re talking about fashion or our restaurant. Nothing too fussy, cluttered or over the top.
On attitude… Always be positive, better to see the glass as half full.
On purpose… You always must have a reason to get up in the morning.
On living … Enjoy every day and be kind to others.
I absolutely love… My grandchildren Matilda, Will, Ethan and Isobel.
Happiness is... Having your family around you every day.
My favourite designers… Chanel, Gucci, Prada, Versace, Dolce & Gabbana.
Living the dream means… Doing what I’m doing now, it doesn’t get any better than this.
In my spare time I like to… Read, do yoga, and spend time with family, yes, I know, I’m with them every day! But we all like each other enough to hang out together in our leisure time too.
I hope to one day… Slow down a bit and let James and Kate take over, hard to loosen the reins though!
Success means… Waking up happy with your achievement every day and not regretting a thing.

When starting a business… Have a huge amount of passion and commitment, but at the same time have a well-researched, achievable business plan.
Most rewarding career moment so far… Meeting a perfect stranger on a beautiful yacht on the Amalfi coast, who, unprompted, when he learned that we were Australian and were from Sydney, said that his favourite restaurant in the whole world was in Sydney. When we asked what it was, he said it was called Catalina! That was a very special moment for us both.
Best gig… A huge fundraising dinner for over 700 people we put on for Queensland and NSW Flood victims back in 2011, along the Rose Bay promenade. Michael’s aim was to raise $1,000,000 (1000 people @ $1000 per person) dinner. In the end we seated over 700 people and managed to hand over more than $700,000 direct to The Salvos. I was so proud of that achievement.
Must try on Catalina menu… That’s a hard one, but for me it would have to be our oysters. We’re very particular about them and they’re 4-year-old, single seed Sydney Rocks, shucked to order. They’re absolutely the best in Sydney as far as I’m concerned.
But if you’re not an oyster lover, or a seafood lover, you would have to try our roasted suckling pig at least once in your life – it’s incredible – it’s the best suckling pig you’ll ever eat – deliciously rich, with paper thin crispy skin.
Must Catalina events… Kate’s New Year’s Day party. It’s an absolute must-go-to event on Sydney’s social calendar. One of those incredible days of music, fabulous cocktails, great food, and company. People fall over themselves to get tickets.
What’s next… Making Catalina even better with a rebuild and extensions happening next year. We can’t wait!
